At the grocery store, I often buy fruits and veggies that are close to going bad. These tangerines might not look perfect, but they're still juicy and delicious! Canadians waste around 2.3 million tons of edible food each year, which produces harmful methane gas and negatively impacts the planet.
I never know what items will be on the sale rack, so it sparks my imagination. Being in the kitchen allows me to be creative and embrace the unknown—it's so exciting not knowing what I'll whip up next! I don't like eating the same thing all the time, so reducing food waste this way is both fun and rewarding.

Recipe: Tangerine Apple Oat Muffins
To make use of some of your tangerines and apples, try this delicious recipe for Tangerine Apple Oat Muffins. They're easy to make and a great way to use up your fruit before it goes bad!
Ingredients:
2 ½ cups of flour
½ cup of oats
½ cup of sugar
2 tsp of baking powder
Juice of 8 tangerines
2 apples, cut into pieces
2 eggs or flax eggs (for a vegan option)
1 cup of plain yogurt
¼ cup of olive oil
¼ cup of milk
Instructions:
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the wells.
In a mixing bowl, combine the flour, oats, sugar, and baking powder. Mix well.
In a separate bowl, whisk together the tangerine juice, eggs, yogurt, olive oil, and milk until well combined.
Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
Gently fold in the apple pieces.
Spoon the batter into the prepared muffin tin, filling each well about ⅔ full.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
