Mauritian/Filipino Fusion Food
Café Kuya is a third-wave coffee shop nestled close to my home, and while I already loved it for its amazing coffee, I was thrilled to discover that they also offer fusion food every so often. When I heard they were blending Mauritian and Filipino flavors, and I was so excited! Having grown up eating Mauritian food and having enjoyed Filipino cuisine on its own, I was eager to see how these two culinary traditions would come together.
My curiosity led me to reach out to Phil, a friend from elementary school who owns this hip and vibrant café. Phil has built a space that not only celebrates coffee culture but also incorporates the rich flavors of his Filipino heritage. He invited me to stop by and experience the fusion pop-up firsthand.
A Culinary Collaboration

Upon arriving, I met the talented chefs behind this fusion experience—Nicky, who specializes in Mauritian cuisine, and John, who crafts Filipino dishes. They explained that this wasn’t their first time hosting a pop-up like this; through past events, they had fine-tuned their approach, ensuring that the flavors and textures complemented each other beautifully.
One of the standout dishes was a paratha wrap filled with kare-kare. The farata, a traditional Mauritian flatbread, was soft yet crispy, providing the perfect vessel for the rich, peanut-based kare-kare, a beloved Filipino beef stew. The dish was elevated with crunchy pickles and fresh vegetables, adding layers of texture and flavor that kept each bite exciting.
To complement the wrap, they served a refreshing rice noodle salad. Light and zesty, it balanced the richness of the kare-kare while adding a bright contrast. The combination of the chewy farata, the tender beef, and the crisp vegetables created a harmony of flavors that was nothing short of delightful. The portion sizes were generous, leaving me feeling satisfied and eager to return for more.
A Celebration of Cultural Fusion
I’ve always loved seeing different cultures come together through food, and Café Kuya embodies this beautifully. The world becomes more vibrant when we blend traditions, creating something new and exciting while honoring the roots of each dish. It’s inspiring to see places like this in our community, showcasing how food can bring people together.
I also learned that Café Kuya explores other fusion concepts, including Caribbean-Filipino flavors. This creativity keeps their menu dynamic and ever-evolving, making each visit a fresh experience.
More Than Just Food
Even if you’re just stopping by for a coffee or matcha, Café Kuya offers a welcoming and lively atmosphere. Their matcha, which I’ve enjoyed many times, is always top-notch, and their rotating menu ensures there’s always something new to try.
