Cabbage Pancakes

Ingredients:
1/2 large cabbage grated
1 large carrot, grated
2 green onions chopped (or use the green part of a sprouted onion)

1/2 cup water or veggie broth
2 eggs (or flax eggs)

1 tablespoon soy sauce

For the Tangy Yogurt Sauce:
1 cup plain Greek yogurt
1 tablespoon sriracha
1 teaspoon sesame oil

1 teaspoon honey (optional)
Instructions:
Prep the Vegetables: Thinly slice the cabbage and place it in a large mixing bowl. Add the grated carrot, beet, and chopped broccoli stalks. If you’re using a sprouted onion, chop the green part and add it to the mix.
