Avocado Chocolate Cake

We've all been there – staring at our fridge, trying to figure out how to use up those overripe avocados before they go bad. As a parent, I'm always on the lookout for creative ways to turn seemingly unwanted ingredients into tasty treats for my kids. One day, I found myself faced with a handful of overripe avocados and decided to experiment with a classic snack idea – chocolate cookies. Little did I know that this kitchen adventure would lead to a delightful surprise in the form of Avocado Chocolate Cake!

Ingredients

To recreate this unexpectedly wonderful snack, gather the following ingredients:

  • 2.5 cups all-purpose flour

  • 2 teaspoons baking powder

  • Pinch of salt

  • 1 cup Dutch-processed cocoa

  • 1/4 cup olive oil

  • 4 ripe avocados

  • 1 cup sugar

  • 1 teaspoon vanilla extract

  • 1/3 cup almond milk

  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a brownie dish or a baking pan of your choice.

  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, a pinch of salt, and Dutch-processed cocoa. Set this dry mixture aside.

  3. In a separate bowl, peel and pit the ripe avocados. Mash them until they reach a smooth consistency. Using avocados in place of butter not only adds creaminess but also makes this treat a bit healthier.

  4. Add the olive oil, sugar, and vanilla extract to the mashed avocados. Mix everything together until well combined. This is where the magic starts to happen – the avocados provide moisture and richness to the cake.

  5. Gradually incorporate the dry mixture into the avocado mixture, alternating with the almond milk. Continue to mix until all the ingredients are well integrated, creating a thick, smooth batter.

  6. Fold in the chocolate chips into the batter, ensuring they're evenly distributed. The addition of chocolate chips adds a delightful burst of sweetness and texture to the cake.

  7. Pour the batter into your greased brownie dish or baking pan, spreading it out evenly.

  8. Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean. Keep in mind that baking times can vary, so keep a close eye on it as it nears completion.

  9. Once done, remove the cake from the oven and let it cool in the pan for a while before transferring it to a wire rack to cool completely.

  10. Once the Avocado Chocolate Cake has cooled, cut it into squares or slices, and it's ready to serve!

What started as an attempt to salvage overripe avocados turned into a delightful surprise snack that my kids absolutely devoured. This Avocado Chocolate Cake boasts a moist and tender texture, with a rich chocolatey flavor that makes it more cake-like than cookie-like, despite my initial intentions. It just goes to show that sometimes, the best creations in the kitchen come from unexpected experiments.

So, the next time you find yourself with overripe avocados in the fridge, don't hesitate to try this recipe. Not only will you use up those avocados efficiently, but you'll also treat your family to a delicious, chocolaty surprise they won't be able to resist. Happy baking!
